Shrimp Peri Peri

Ingredients
- Marinade: 1/4 c lemon juice
- 1/2 cup olive oil
- 3 cloves garlic crushed
- 1-2T Peri Peri or a hot chile sauce
- 1-1.5 lbs raw shrimp cleaned and peeled
- 2T chopped cilantro
- Peri peri Rice: 1 chopped onion
- 1 chopped red bell pepper
- 1 cup rice
- reserved marinade
- 2 cups (1 can) chicken broth
- 1/2 cup white cooking wine
- 1/2 cup or more of chopped cilantro
- Garlic Butter: 1/2 cup (or less) butter
- 1 T chopped garlic
- 1 T chopped cilantro
- 1-2T Peri Peri
Method
Step 1
Mix marinade and pour over shrimp. Marinate in fridge for 30-120 minutes.
Step 2
Pour off excess marinade in to rice pot. Saute onion and pepper until soft and transluscent. Add rice and stir to give it a toasty flavor. Add broth and wine. Bring to a boil. Cover and simmer 15-20 minutes. Stir in cilantro, cover and let sit while you cook shrimp.
Step 3
Place shrimp in large fry pan in single layer. Baste with garlic butter. When shrimp start to show pink flip and baste again on other side. Do not over cook shrimp. Serve with rice.
